The Monthly Cookie!

Happy Easter!...just kidding. April Fools! But here's a cookie you can make especially for Easter.
Easter Nest Cookies
These tasteful cookies will leave you with a wonderful chocolatey memory. They can be made all different ways. Our favorite way was with the peanut butter but feel free to add chocolate chips, caramel or anything else that fits your tastebuds!



Here's the recipe to these tasty creations:
Ingredients:
*1 stick of butter
*1/2 cup of sugar
* 1/2 cup of brown sugar
*2 eggs
*1 tsp. of vanilla extract
*1 oz. of bittersweet chocolate (melted)
*1 1/3 of flour
*2 tbsp. of cocoa powder
*1/4 tsp. baking soda
*Pinch of salt
*3/4 cup of oats
*1 cup of flaked coconut (optional)
*Cadbury Mini Eggs (optional)
*Peeps (optional)
*Peanut Butter (optional)
*Chocolate Chips (optional)
***Cadbury Mini Eggs and PEeps go on top (you can choose what ever you want like maybe easter m&ms or something like that) and you can choose to mix in chocolate chips, peanut butter or both.

Preheat the oven to 350* Fahrenheit. Grease two baking sheets. Beat the butter and sugars. Add the eggs, vanilla extract and melted chocolate and beat until smooth.

Sift the flour, cocoa powder, baking soda and salt together and stir into the butter mixture. Stir the coconut (optional, chocolate chips (optional) and oats into the batter and mix to combine. Drop spoonfuls onto the baking sheets and shape into small rounds. Use a spoon to scoop out a tiny bit of peanut butter (optional) to drop onto the top of the cookie. Using a floured thumb, make an impression in the center of each cookie. Bake for 10 to 12 minutes.

Take the cookies out of the oven and transfer to wire racks for cooling. When completely cool, fill the "nest" with the Cadbury Mini Eggs (optional) and/or the Peeps (optional).
Makes 2 dozen.
